If you do a search in this list's archives, or those of http://www.webhostingtalk.com/ you will find some good pointers on server security. As a general rule turning off services that you don't need and closing unneeded ports is a good start.

<http://www.average.org/cobalt/quick-security-guide.html> gives you a good checklist to start with. Bear in mind that it's just a start, security is something you always have to keep an eye on because the crackers are trying to find ways around the walls you put up.
