One caveat:

MAKE SURE THE NEW SERVER IS RUNNING, AND WILL START ON BOOT

Let's say you're ssh'd onto the server on the old daemon.
(Chorus: you're ssh'd onto the server on the old daemon)
You uninstall the old daemon, and install the new daemon.
Two things to do:

1) start a new ssh connection to the server, and make sure 
   it's being handled by the new daemon (logfiles)

2) check /etc/rc.d/init.d and make sure the new daemon is
   started (if it's installed in a different loaction or
   requires different startup files)

The long midnight drive you save could be your own.
