There is an exclusion list, so you can enter patches there which you don't
want. And yes, it's of course possible to code a delay into the script. After
all it's just a shell script.
However, I'd rather take the risk of a faulty patch than to have a popular
exploit on the machines, so I go for the instant upgrade. ;o).
